Shrimp Alfredo Pasta Recipe

Shrimp is one of the most versatile ingredients that you can use in your dishes. There are literally hundreds of shrimp recipes that you can try, from simple broiled dishes to the more complex gastronomic delights. Shrimp Alfredo pasta recipe is one dish that is easy to make and is guaranteed to be one of your family’s favorite go-to meal.
For this recipe you will need –
1 – 1 ½ medium to large shrimp, deveined and shelled
2 garlic cloves, finely chopped
¼ cup shallot, minced
2 teaspoons parsley, minced
4 egg yolks
1 cup half and half
¼ cup butter
½ cup parmesan cheese, freshly grated
½ lb pasta (you can use linguine or fettuccine)
There are several ways that you can do this shrimp Alfredo recipe. You should first sauté the garlic, shallot and shrimp in melted butter over moderate heat. Cook for 3 to 4 minutes or until the shrimp turns opaque but is still firm to the touch. Next, reduce heat and stir in the fettuccine or linguine. Mix together the yolks, parmesan cheese and the half and half in a bowl. Add this mixture to the shrimp and pasta and cook until it thickens. Keep tossing it for 3 to 4 minutes so the egg doesn’t curdle. Stir in salt, pepper and parsley.
In the other way to cook this shrimp Alfredo recipe, you will still use the same ingredients but substitute 1 small tub of cream cheese, ½ pint whipped cream and 3 tbsp cornstarch for the half and half. Then you melt the butter in a skillet, add the shrimp and cook slowly over low heat. Remove and set aside the shrimp once it turns pink in color. Slowly melt some butter again and add the whipped cream and cream cheese. Stir until it’s melted and smooth. Add the parmesan cheese and season to taste. Combine the cornstarch with several tablespoons of water and add to the sauce to make it thicker. Add the shrimp to the sauce and serve it over the cooked pasta.
If you’re press for time but still want to serve this for dinner, prepare the same ingredients as in the previous recipes but use a store bought Alfredo sauce. Start by cooking the pasta in boiling water for 8 to 10 minutes or until al dente. Drain and set aside. While your pasta is boiling away, heat olive oil and butter in a saucepan. Add onions and cook until it’s clear and soft. Add garlic, red pepper and half a pound of diced Portobello mushrooms. Add the shrimp and pour in the Alfredo sauce, Romano or parmesan cheese and cream. Season to taste.
Remember that shrimp is very delicate and should be cooked quickly to preserve its sweet flavor. It takes about 4 minutes to cook or as soon as it turns pink. This is why it goes so well with the Alfredo sauce. Both have delicate nuances and shouldn’t be overwhelmed with different spices. Keep your shrimp Alfredo recipe simple and light.
